Welcome. I hope you are enjoying a relaxing and wonderful summer with family and friends. And I am sure you join me in welcoming summer's bounty of nutritious fruits and vegetables now arriving at our local farm stands and farmers markets.

 

We have been busy at Dr. Dan's expanding our Nutrition Program offerings and will begin rolling out new programs beginning in August. I wanted to devote this newsletter to the topic of optimal nutrition and give you a sneak peek at our new program offerings.

How many times have you heard us say that Optimal Nutrition leads to Optimal Health?

 

Too many times to count, I am sure. Clearly, we are passionate about good food and nutrition and want you to become as passionate as we are about safeguarding and enhancing your health one meal at a time.

 

Let's Face It, Food Just Ain't What It Used to Be

Over the past 50 years or so, the way we nourish ourselves has changed dramatically. In this country, what has widely been considered as "progress" in our agricultural methods and modern diets has had a devastatingly detrimental effect on all of us. In short, modern diets lead to modern diseases like the vast majority of conditions that are treated in medical offices today - diseases like Cardiovascular Disease, Diabetes and Cancer. In fact, from my perspective, virtually all illness today is nutrition related.

Consider the following chart that contrasts today's Modern Diet with Traditional Diets that were the norm during the early part of the last century:

 As you can see, the shift in our diet has been tremendous. Not indicated above is the fact that we are now consuming staggering amounts of sugar, trans and rancid fats and processed foods.

 

Cereals

The picture on the right depicts a typical breakfast cereal. Have you ever wondered how they produce all those perfectly shaped pieces? OK, maybe you haven't. Read on anyway. It is a very interesting process and what you learn may influence your future breakfast choices. I certainly hope so.

 

Cold breakfast cereals are produced by a process called extrusion. Grains are mixed with water, processed into a watery mixture and placed in a machine called an extruder. The grains are then forced out of a tiny hole at high temperature and pressure, which shapes them into little o's or flakes or shreds. Individual grains passed through the extruder expand to produce puffed wheat, oats and rice, etc. These products are then subjected to sprays that give a coating of oil and sugar to seal off the cereal from the ravages of milk and to give it crunch. (As you are readers of past Dr. Dan's newsletters, you know that when trans or vegetable oils are heated they turn rancid and lead to inflammation in the body.)

 

No doubt, added dyes, artificial flavorings and chemicals then turn the breakfast cereal above into "fruit cereal".   More often than not, sugar claims its place at the top of the ingredient list on many breakfast cereals.

 

And if you think "fortified with vitamins and minerals" is a good thing, think again. Since the processing of cereals to extend their shelf life robs most of the nutrients from the grain itself, manufacturers add back in very low quality synthetic vitamins and minerals to convince consumers that eating the manufacturer's cereal is actually good for their health.

 

Speaking of "good for your health", one well known breakfast cereal proclaims itself to be "Heart Healthy" promising to lower one's cholesterol if eaten daily. Knowing what you now know, how on earth could that be? By the time they are finished processing the life out of real heart healthy steel cut oats, the end product bears no nutritional resemblance to the steel cut oats we recommend as a healthy breakfast cereal.

Progress(?) - At a Very High Price

 

For those of you who can remember the advent of "convenience" and fast foods several decades ago, you'll recall that these new foods were heralded as remarkable improvements aimed at freeing us up from the drudgery of preparing meals at home. Yes, we gained convenience and saved time, however our nutrition - and ultimately our health - paid a very high price. We traded time and convenience for nutritional value and our health while food manufacturers lined their pockets with obscene profits.   Do any of you recall willingly striking such a bad bargain? I sure don't. 

It is not too late to turn the tide, however. Remember, every time you opt to save time and energy by purchasing substandard, nutritionally deficient food you are complicit in this whole nutrition debacle. Opt instead for nutrient dense food and prepare it in your own kitchen. Once you get the hang of it, I assure you, like Cynthia says a few paragraphs below, you won't look back.

 

I relish the time I spend preparing and eating food with my family. I consider it sacred time that I would not trade for anything in the world. We live in such a fast paced world - we desperately need to slow down and enjoy life. To me, enjoying a leisurely meal with my family and friends is calming and satisfying, both physically and emotionally.

 

Let's get back to the way life used to be, savoring nutritious food and warm conversation with those we love. What could be more important to us? The quality of our health and life depend on it.

 

             

 

Our Focus: Nutrient Dense Nutrition

 

Last fall we launched our Whole Foods Nutrition Program and have had the honor of working with many of you in this course as we provide the guidance to help you transition to a nutrient dense eating program. Sara Oski, our Nutrition Counselor, has done a fabulous job teaching this monthly four week program to rave reviews. Participants tell us it has made a significant difference in how they approach nutrition and healthy eating and in how they look and feel. Here's what one recent participant had to say:

 

"I visited Dr. Dan wishing to gain the "Optimum Health" he proffers. I did not realize that would involve changing every food item on my shelf. However, I knew that if I was going to give this treatment an honest shot, I had to embrace the full experience Dr. Dan's offered. My journey began with simple supplements and continued into rethinking all of the food I normally shopped for, cooked and presented to my family. Whole milk? 100% fat and raw dairy? Whole, sprouted grains? Real Pickles, what are those? Kelp sprinkle, really? My mind boggled, I needed help.

 

I entered the Nutrition Class offered at Dr. Dan's. Slowly, but surely, each item in my food pantry got replaced. Not all at once, but replaced as each thing ran out. Initially afraid of gaining weight with all these "healthy fats," I found that since I am totally satisfied on much less food, I have lost 10 pounds since I started this new regime.

 

It's a journey I am still travelling, learning more about my body's individual needs, but with Dr. Dan, Sara and Emily there to hold my hand, it gets easier every time I go shopping. I now totally embrace and love this journey. And though most of my family and friends are absolutely appalled when they see me eating whole milk yogurt drizzled with pure, organic maple syrup or an egg fried in coconut oil atop a slice of sprouted whole grain toast I smile and think, "they do not know what they are missing."

This program provides intensive instruction on how to transition to a nutrient dense eating program in 4 weekly 60 minute sessions. Required Pre-Reading: Healthy 4 Life Booklet $10.

Session 1 - Fundamentals of a Healthy Diet

With the fundamentals in place, we'll delve more deeply into how to make a smooth transition toward optimum nutrition. From Dr. Dan's Kitchen - Summer 

Gazpacho Soup 

 

 

GazpachoSo refreshing on a warm summer evening!

  

3 Large ripe tomatoes, core and chop   

(reserve 1-2 tsps and mince for topping)

1 Sweet red pepper, seeded and chopped 

(reserve 1-2 tsps and mince for topping)

1 Medium yellow onion, peeled and chopped

1 Shallot, peeled and chopped

3 Garlic cloves

1 Large cucumber, peeled, seeded and coarsely chopped (reserve 1-2 tsps and mince for topping)

¼ Cup red wine vinegar

¼ Extra virgin olive oil

1 Cup tomato juice

Celtic sea salt to taste

Fresh ground black pepper to taste

Pinch of Cayenne

4 ice cubes

Optional - chopped chives, parsley and lime slices for additional topping

 

Place all ingredients, except toppings and ice cubes in a blender or food processor and puree. Prepare 2 serving bowls and place 2 ice cubes in each bowl. Add 1 cup of gazpacho mixture and top each bowl with mixture of toppings and enjoy! Serves 4.

  

 

 

There you have it! How about inviting some friends over for Summer Gazpacho Soup, Whole Wheat Sourdough Bread topped with delicious Pastured Butter and, of course, stimulating conversation!
